Which type should I choose?
The most specific one that fits: Dentist rather than MedicalBusiness, Bakery rather than FoodEstablishment. Use LocalBusiness only if nothing more specific applies.
How do I write opening hours?
One rule per line: days then times. Mo-Fr 09:00-17:00, Sa 10:00-14:00, Su closed. Several time spans are allowed, such as 09:00-12:00 13:00-17:00, and 00:00-23:59 means open 24 hours.
Where do I put the code?

LocalBusiness structured data
Schema.org’s LocalBusiness type and its many subtypes describe a physical business: its name, address, phone number, opening hours, price range and photos. Expressed as JSON-LD in a script tag, this information is easy for search engines to read and can appear in rich results and knowledge panels.
Opening hours are the most error-prone part. Schema.org expects one OpeningHoursSpecification per set of days that share the same hours, with full day names and 24-hour times. The generator accepts a compact notation and groups days with identical hours for you, including split shifts and 24-hour opening.
Precise data helps. Coordinates with five or more decimal places point to the right building, the international phone format works for every visitor, and the two-letter ISO country code avoids ambiguity. Images should show the business and be crawlable.
Consistency matters more than volume. The name, address and phone number should match your Google Business Profile, your website and directory listings exactly. Structured data supports that consistency but does not replace a verified business profile.
